Healthy Waffles 3 Ways


Sometimes you just want waffles for breakfast! These 3 different healthy waffle recipes give you the best of both worlds. You can have your waffle and enjoy it without any guilt of sabotaging your diet! Using spelt flour adds soluble fiber, which lowers cholesterol, keeps your blood sugar stable, makes it easier to lose weight and even help keep you feeling energetic, longer. Using healthy fats such as coconut oil or topping it with almond butter keeps you feeling satisfied longer, which will help you eat less.


Healthy Waffles:

1 cup whole-wheat flour

1 cup spelt flour

1 1/2 teaspoons baking powder

1/2 teaspoon salt

1/4 teaspoon baking soda

2 cups almond milk

2 eggs

1 tablespoon coconut oil

1 tablespoon vanilla extract

2 tablespoons honey

1 tablespoon chia seeds

Stir flours, baking powder, salt and baking soda in a large bowl. In a separate bowl mix almond milk, eggs, honey, chia seeds, vanilla and coconut oil. Add the wet ingredients to the dry ingredients and stir well.


Preheat waffle iron. Brush the surface lightly with oil. Fill the waffle iron two-thirds full of batter. Cook until the waffles are crisp and golden, 5 to 6 minutes. Repeat with the remaining batter, brushing the surface with oil before cooking each batch.


We really like waffles in our house, I usually make them on Sunday morning when we're not rushing to get out of the house. ;) Sometimes I will make a double batch and freeze the leftover waffles in individual ziploc bags. Then, I can whip them out of the freezer throughout the week on those days that we are running a bit late. Amidst the chaos, as I hand my kids their waffle, I feel like such a super hero. :) It's all about the small things in life.

Easy Waffles 

2 cups spelt flour

3 Tspn baking powder

2 Tbspn honey

1 1/2 cups almond milk

2 eggs

3 Tspn vanilla

Mix all ingredients well using a whisk until there are no lumps. Pour a ladle-full into waffle maker. Optional: Top with nut butter, bananas, berries, a drizzle of honey etc.


Sometime I even changed things up a bit and make dinner savory waffles using buckwheat flour and savory spices as opposed to a traditional sweet waffle. The first time I tried it my kids were like, "what one earth is this"?!! But, after they tried it they kept asking for more... which is always a good sign in my house!



Savory Waffles

In a blender mix together:

2 cups buckwheat flour

6 tspn baking powder

2 tspn salt

1 1/2 cups almond milk

2 eggs

3 cloves garlic

Handful spinach

Fresh herbs (whatever you have on hand such as basil, chives etc)


Pour ladle full into waffle maker. In the meantime prepare a runny egg (I was multi-tasking, story of my life, lol, so my eggs were a bit drier than I'd like...) and serve on top of waffles with a handful of spring mix lettuce and tahini dressing. A complete breakfast for dinner.
