Plantain Nachos

Looking for a fun, simple, flavorful and nutrient packed dinner, snack or party dish? Look no further than Plantain Nachos. My boys love anything that has cheese on it and then add the DIY dimension and they are sold.


I needed something quick and easy the other day to fill some "staaaaarving" tummies so of course I opened the pantry for some ideas and the plantain chips were just sitting right there - front and center.


Plantains are a great snack. I love them, the kids love them, it's better than eating potato chips and they have plenty of health benefits so it is a win-win.

They resemble bananas and are actually considered a fruit. Plantains are also known as cooking bananas, but when cooking them, they are treated more like a vegetable. One great thing about plantains is they can be cooked using many different cooking methods such as boiled, fried, baked, and even grilled. They can be eaten raw but most people don’t because of the bitter taste.  As plantains ripen, they become sweeter and more likely to be eaten raw.

Plantains can be found in the produce section of your grocery store in a variety of colors.

The color of the plantain has to do with its ripeness and can be found in shades of green, yellow and black. Green plantains are at their earliest stage and are best fried. Next, they turn yellow and are at the best stage for cooking either by roasting, baking, boiling or frying. The last stage of the plantain is when they turn black in color and are best eaten as a fried dessert because of the sweet taste and soft texture.


Did you know plantains are one of the best forms of vitamin C, which is great for boosting immunity?? They are a great source of potassium and fiber and plantains are also high in vitamin A, which helps promote healthy vision and skin. How's that for a win-win?! No need to sacrifice on taste to get health benefits from the foods you eat!!
